View Full Version : How to properly cook a steak.
Okay here is the proper way to cook a steak.

Preferably you would use a better cut then mine. Mines a top loin strip. Do whatever cut you want the method is the same.
All the ingredients. Cast iron pan, sea salt and pepper from costco. Thats all you need.
You have to use a cast iron pan. They are only 10 bucks

30 minutes before you want to start cooking put your steak out on the counter. The steak should be at room temperature when you are throwing it on the pan. Put your cast iron pan on highest heat, don't oil or grease up the pan. Preheat your oven to 350.
first lightly dab the steak with a paper towel to remove some of the excess blood.

Next put a liberal amount of pepper on the steak. Remember both sides and the edges. Lightly rub the pepper into the steak. This isn't shown in the pic.

Wait 5 minutes for everything to heat up. Also open any windows or doors since it is going to get smokey. Lightly salt the steak right before you are going to throw it in the pan. Put a teaspoon of butter on the pan(apparently canola oil or peanut oil are better choices) and then throw the steak on. Cook on one side for 1.5 minutes then 1 minute on the other.

Take the pan and steak and put it in the oven. 5 minutes should be good for medium.

Take the steak out after 5 minutes and put it on a plate and tent the steak using aluminum foil, 5 minutes should be good. This will keep the steak cooking even though it is removed from the heat. Put a little slit at the highest point of your tin-foil tent to let air escape.

I know everyone has their own special way to cook it. This is the most basic way to cook a steak in a cast-iron pan. And don't mind my shitty dirty kitchen. I'm living with 5 other retards in a rental house.

That is pretty close to what you want too do. Except you fucked up and used an oil with too low a smoke point. That causes a bitter taste and all the unneeded smoke.

yeah i prefer it bloody too, but i overcooked it a bit. I left the steak sitting for 8 mins or so while doing dishes and it came out a little overdone.

yeah, i actually do my steaks covered in some kind of rub... then preheat grill to 500+ degrees.... place steak on grill and leave for 5 mins with lid closed on each side... bam, delisciousness :bowdown:

from my experience. i sear my steak below the smoking point of the olive oil and it turns out perfect.
if the oil is smokeing the skillet is too hot.
I tried canola oil once. IMO it made it taste bad. The smell and taste of the canola on my steak was gross to me.
EDIT: oh yeah, dont tell me how to cook muh steaks :squint:

i can't believe it was never mentioned to season the cast iron skillet...that should be the first thing you do when you buy a new pan, for the noobs in here going to follow this EDU...google it for the method.
what i personally do is sear the steak (generally on a HOT AS FUCK pan, about a minute per side will get the outside nice and crispy) to help hold in the juices and flavor of the steak itself, then i either grill it or broil it (weather and propane pending) until i get between 135-145 in the middle of the thickest part of the steak...
my grill is useually set around 350-400 inside...
then, upon removing it from grill, i let it "rest"...not under any foil, or still in the pan, just off the grill/pan/W.E. and on my plate. i'll useually let it rest for 2-3 minutes, maybe a tad longer if i have other food to consume with it...that helps the steak soak it's juices back up so they dont come spilling out when you cut into it.
for seasoning, i like to use Spade L Ranch for beef...when i have it. otherwise just kosher salt and fresh black pepper rubbed into the steak, not just sprinkled on top. when i sear it i'll use just a touch of extra virgin olive oil.
i learned a lot after watching Alton Browns "Good Eats" episode on cooking a steak...then i kinda went from there with it.
having a chef as a girlfriend helps too. :)

Why would i mix an oil with a lower smoke point?
is 420 degrees not hot enough to sear?
EDIT: BTW i might try the fat thing next time i have a ribeye

the best way to clean a pan is right after use to put water and dish soap in it... let it sit for a couple hours then a coarse sponge (mine is like wrapped in this white plastic abrasive surface) which will help scrape off any remaining grime... But you MUST put the pan in soapy water right after cooking, otherwise the grime burns and drys on the pan and is a bitch to get off

...I've been cooking since I was 8 and Ive worked at 2 restaurants that served pan-seared steaks, shit can't touch a grilled steak, shit even if you dont have a bbq, use the damn broiler in your oven...

I have to disagree right off the bat here. A steak is meant to be grilled. It's meant to fill the neighborhood with the essence of grilled meat. A steak should never be cooked on a stove, thats a great way to ruin a steak.

i never marinate or use sauces like a1 or whatever. Bernaise sauce or whatever is pretty fucking tasty though. Salt and pepper doesn't ever get boring to me :dunno:

i'm not too sure since i never tried it myself, but i'd just cook the steak in the oven for around 8 mins instead. That should do it, you don't want to sear the steak any longer unless you use less heat then you could maybe sear each side for 2-3 mins and oven for 5 mins to make it well done

My only problem is that it turned out a little too rare. For medium I think I'm going to leave it in the oven for about 7 minutes next time.

People just get a boner for the word grill, it's a damn electric unit, do they even have one with a floating hinge yet so that it cooks evenly across the surface area? I haven't seen one yet.

In this recipe by Alton Brown he actually rcommends putting the cast iron pan into the oven to heat, instead of using the burner, I suppose that would make the heat more even, and probably hotter than the burner can manage.. dope idea
I know when the badass restaurants do it, they charbroil, which can get to what like.. 1800 degrees? I wonder if you could put the oven in cleaning mode (around 800-900) and if you can unlock/stop it.. do it that way :eek3:

I just cooked 3 steaks using the cast iron method, here is the proper way to do it.
1. Start with a nice cut, I prefer the taste of a good 1.5 inch thick ribeye. Never freeze the steak beforehand, always use a fresh steak.
2. 24 hours before you plan to cook the steak, place it in a container with Italian salad dressing. Make sure to get dressing on both sides. Cover and put the container in the fridge (this step can be changed for any type of marinade you prefer, if you like a rub you don't need to rub the steak 24 hours before, 2 hours is good)
3. 2 hours before you are ready to cook remove the container from the fridge and let it sit on the counter.
4. 15 minutes before you're ready to cook turn a burner on your stove to high and turn your stove on to its' highest temp setting and set it to broil. Place your pan on top of the burner.
5. Put a small amount of oil in the pan. Place your steak in the pan and let it cook for 75 seconds. After 75 seconds flip and repeat.
6. When both sides have been seared, place the pan in the oven on the bottom rack. Cook for 2.5 minutes. Flip the steak and cook for 2.5 more minutes.
7. Remove steak from oven and serve immediately.
I recommend garlic mashed potatoes and broccoli as side dishes.

I agree that a steak on the grill is phenomenal, but you can get a smoky flavor even without it. Most people don't cook it correctly on the grill anyways.

That's cooking it too long.
Tonight I did the Alton Brown method and it's literally the best pan cooked steak I've ever had.

That really all depends on how hot your oven gets, how crispy you like the outside of your steak, and how thick the steak is.

you're going from meat at 40ish degrees to 500ish in no time at all, if you can get it up several degrees it makes the outside easier to cook/use higher heat without it being cold as hell and not searing properly or cooling the cooking surface down

i used peanut oil instead of butter and it worked so much better. Not as much smoke and was less burnt.
Didn't take a pic as i accidentally ended up cooking it medium well and noone wants to see a pic of that.

the best way to clean a pan is right after use to put water and dish soap in it... let it sit for a couple hours then a coarse sponge (mine is like wrapped in this white plastic abrasive surface) which will help scrape off any remaining grime... But you MUST put the pan in soapy water right after cooking, otherwise the grime burns and drys on the pan and is a bitch to get off

To the person who asked - if you want to clean a CAST IRON pan that is completely crusted over with shit, and seems unsalvagleable any other way, just heat the fuck out of it and the non-pan stickes should just flake away.
Either leave it in your oven on a clean cycle (assuming it has no handle, now... if it does, remove the plastic bits or your oven will smell like burned plastic forever), or if you're feeling saucy take it out to a fire pit, get a good coal bed going (talking white-hot) and lay the shit right in there, moving it around with fire tongs every once in a while. The blackened bits should crack right off leaving pristine iron behind.
Reseason it afterwards, tho.
