View Full Version : EDU: Home made spaghetti sauce v. HON GREE

My mom has a big garden , and gave me a bunch of tomatoes. SAUCE TIME!

First, crack a bottle of red wine, and pour yourself a glass. This bottle I believe is courtesy of Mr. and Mrs. Bob Abooey.

Here are the fucking tomatoes. Not the prettiest, but these bitches are all natural, fresh, and full of flavor.

More ingredients, jalapenos and green peppers are from the garden as well, garlic is store bought.

Boil up a big pot of water, and core/get rid of the bad spots on the tomatoes. Throw them in the boiling water for 1 min, then put them in a bowl of ice water. When they are cool, the skins will slide right off! Chop them a bit, and try to get the seeds out.

Next, get some evoo going in a big pot, and add the garlic, then onions, then green peppers and jalapenos. After a bit of a sizzle, dump in the tomatoes. Pour some of the red wine in the sauce.

Now that its getting bubbly, turn the heat to just a simmer. You want to add salt/pepper/basil/sugar (cuts the acidity of the tomatoes), and I add a bit of cinnamon. Also, 1 can tomatoe paste to help thicken.

Here it is simmering.

Here it is an hour or two later. OM NOM. I let mine cook like 3 hours or more.

I also made some bratwurst, cut it up, and put in in :wiggle:

Boil some pasta

Put some garlic and butter and basil on some bread and toast it in a pan.

OM NOM NOM, serve with parm cheese :run: and maybe more wine :oopsie:

trying to make it somewhat fancier :o

trim up the bread and cut it in hald, rather than just a hunk of toast.

I took the crusts and dipped them in the simmering sauce and at them , as I was cooking :yum:

I'll be growing gooseberries next year :bowdown: I miss the little bastards , I used to eat them by the pound during childhood

It is the type of tomatoes, they grow very big, and very flavorful, but are quite ugly. Its how they all are. Perfect for sauces, not good for things like sandwiches, because of the shape, and their juciness.

i can't make sauce without a loaf of Italian bread, how else are you supposed to taste it

Those might not be jalapeņos bro. They are too pale, even if they weren't ripe, jalapeņos are stubby when they are small. Sorry, to be picky but this is one of the thinks I know about :dunno:

true, I dont know what they are. They are MOTHERFUCKING HOT though, and my mom has a ton of them. :dunno: They were pretty small/young, i only took 3-4 that looked edible.

Ya man, the paler/smaller they are (generally) the hotter they get. For example cherry peppers or habaneros, one is the size of a grape the other is bright yellow, and will destroy your anus.

you need to pick up a 50$ strainer. Then you can just toss the whole tomatos in the pot to cook and strain them later. It's much simpler.

deformed matoes are the best for sauce. specially when you let them get over ripe and they're all soft.

i too simmer the shit out of my sauce. i leave mine on a simmer for at least 4 hours. nice and thick. :bowdown:
